While we were investigating back-to-school ideas, we were inspired by toast recipes found in Cooking Light magazine, including Garlicky Beans on Toast, Ricotta-Pistachio Toast, and Cheddar ‘n Apple Cinnamon Raisin Toast. Here is our suggestion for a healthy start-your-day or after-school snack toast.

INGREDIENTS:

  • 3 slices of your favorite Breads from Anna bread
  • 1 avocado, halved and flesh scooped out
  • 1 Tablespoon lime juice (optional)
  • 6 slices bacon, cooked and finely chopped
  • 1 tomato, sliced

DIRECTIONS:

1. Toast bread.
2. Mash avocado and mix with lime juice and bacon.
3. Spread avocado mix on toast, and top with strawberries or chopped tomatoes.
