INGREDIENTS: 

  • Prepared Pizza Crust (or grilled!)
  • 8 oz. tomato paste – we like tomato paste vs. sauce because it tastes less acidic and has a more concentrated flavor.  It is also less likely to make a soggy pizza.  If you prefer pizza sauce, use lightly.
  • 4 cups thinly sliced zucchini, bell peppers, mushrooms and other vegetables of your choice
  • 1 cup fresh basil leaves
  • 8 oz. feta or fresh sliced mozzarella cheese (optional)
  • Cheese alternative: Top with caramelized onions or caramelized zucchini (see below)

INSTRUCTIONS: 

Spread pizza with thin layer of tomato paste. Top with thin slices of your favorite summer vegetables and basil. Top with cheese or caramelized onions or zucchini.
To make caramelized onions: 
Heat 2 tablespoons oil in a large skillet over medium high heat. Add 2 cups onions, thinly sliced.
Stir and cook until onions begin to brown. Reduce heat to medium, and cook 20 – 30 minutes until the onions are tender and caramelized, stirring frequently.
To make caramelized zucchini:
Shred medium-size zucchini with large box shredder (yield approximately 2 cups).
