Use our banana bread mix to make a batch of pancakes! Bananas can go ripe quickly and if you happen to have three extra bananas sitting around and it is breakfast time, these pancakes are an easy and unique spin on a plain pancake.
INGREDIENTS
- 2 large ripe bananas (1 cup)
- 2 eggs
- 1/3 cup vegetable oil
- ½ cup milk (low fat or whole)
- 1 package of Breads from Anna Banana Bread Mix
- ½ cup chopped pecans or walnuts (optional)
DIRECTIONS
- Preheat griddle on medium heat (350 degrees) and lightly oil griddle.
- Beat together bananas, eggs, oil, and milk until smooth. Pour contents of mix into a medium bowl.
- Add banana mixture and mix with a spoon or fork until well blended. Fold in nuts if used.
- Spoon batter onto griddle, leaving room for each pancake to spread.
- Cook about 5 minutes or until the bottom of each pancake is a medium brown. (It’s okay if the pancake is still soft).
- Flip and cook another 2-3 minutes.
- Serve with maple syrup and slice bananas. Makes 12-16 large pancakes.
