Pumpkin and spice in this frosting recipe adds a hint of festive flavor and color to these cupcakes. The fun will be in designing the jack-o-lantern or other ghoulish faces with younger bakers. We encourage you to be creative with toppings and design, and send us photos of your results!
Yields 24 cupcakes.
Ingredients:
- 1 package Breads from Anna Gluten-Free Maple Pancake & Muffin Mix
- 1/2 cup potato starch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup honey or brown sugar
- 1/3 cup oil (coconut, safflower, grapeseed or butter)
- 3/4 cup milk or favorite non-dairy drink
- 3 jumbo eggs
- 1 Tablespoon vanilla
Directions:
- Preheat oven to 350 degrees. Prepare cupcake pans with 24 cupcake liners.
- Whisk all dry ingredients, then blend in the wet ingredients and mix until smooth.
- Pour into cupcake pans.
- Bake for 20 minutes or until toothpick tests clean.
- Cool on baking rack.
- Frost with Pumpkin Spice Goat Cheese Frosting or any frosting of your choice.
- Create decorative jack-o-lantern faces with chocolate chips or raisins and avocado wedges. Be creative!
Pumpkin Spice Goat Cheese Frosting:
- 3/4 cup goat cheese
- 1/3 cup maple syrup
- 2 Tablespoons pumpkin
- 2 teaspoons vanilla
- 1/4 teaspoon pumpkin pie spice
Combine all wet ingredients in a food processor and process until smooth.
